For buyers who love it, the wild, fruit-fermented, mocha-and-blueberry character of a well-sourced Harrar natural is unlike anything else in Ethiopian coffee. Understanding what Harrar is and what makes it distinctive helps roasters decide whether it belongs on their green programme.

    Where is Harrar?

    Harrar (also written Harar, Harari, or Harer) refers to both the city and the surrounding coffee-growing area in eastern Ethiopia, encompassing Harari Region and the Eastern and Western Hararghe zones of Oromia. The city of Harar is one of the four holy cities of Islam and has been a coffee trading centre for centuries.

    Coffee grows at altitudes of 1,500m to 2,100m. The climate is drier and warmer than the southern Ethiopian highlands. This dry climate is what makes natural processing the default: water for wet processing is scarce, and the conditions suit whole-cherry drying.

    Harrar is grown by smallholder farmers on garden plots rather than through large cooperative structures. Traceability tends to be at cooperative or village level.

Despite this, Harrar commands a loyal following among specialty buyers precisely for this character.

    Harrar works well as a single-origin filter where its distinctive character can develop fully. As an espresso, it produces a complex, wine-forward shot and is increasingly used as a distinctive blending component.
