Washed vs Natural Coffee Processing
Washed and natural are the two primary coffee processing methods used in Ethiopia. The same heirloom genetics grown at the same altitude will produce a completely different cup depending on which method is used — washed delivers clean florality; natural delivers fruit complexity.

Washed coffee is depulped and fermented before drying, producing clean, floral, tea-like cups. Natural coffee dries whole in the cherry, producing fruitier, heavier, wine-like cups. In Ethiopia the same heirloom genetics yield very different results by method, so the processing choice drives flavour more than variety does.
How washed processing works
Ripe cherry is pulped to remove the outer skin, fermented in tanks for 36 to 72 hours to break down the mucilage layer, washed with fresh water, and dried on raised beds. The result is a clean cup where the intrinsic character of the bean — variety, altitude, terroir — expresses without fruit influence.
For Ethiopian heirloom genetics, this is where jasmine, bergamot, and citrus aromatics appear most clearly. Grade 1 Yirgacheffe washed at 1,700 to 2,200m produces the most floral cup profile in world coffee because washed processing allows those genetic flavour compounds to express unobstructed.
How natural processing works
Whole cherry is spread on raised drying beds with the fruit intact and dried for 25 to 40 days. During drying, the fruit ferments around the bean — sugars and acids from the skin and pulp migrate into the bean's cellular structure. The result is a fruit-forward cup where berry, tropical fruit, and wine-like compounds dominate.
Harrar in eastern Ethiopia is processed almost exclusively as natural because the dry climate makes washed processing impractical. Guji naturals — from the same heirloom populations that produce floral Guji washed lots — express mango, papaya, and strawberry when naturally processed.
Which should you source?
The answer depends on your programme:
- Filter / pour-over: Washed Ethiopian — Yirgacheffe or Guji washed. Clean, floral, high acidity.
- Espresso single origin: Natural Ethiopian — Guji natural, Harrar, or Sidama natural. Fruit mass and body work well through espresso extraction and across milk drinks.
- Blend component: Both. Washed provides clean sweetness and florals; natural provides body and fruit complexity.
- High-volume single origin: Washed Sidama or washed Jimma — most versatile and cost-accessible.
